THE PIZZA

 

Every day a million pizzas end up in the stomachs of Italians. A deeply rooted passion that knows neither crisis nor regret, a true industry that each year grosses over four thousand billion [lira].

< I like pizza because it is a simple food and is characteristic of traditional Italian cuisine. Besides, I can also find it at a good price.

Meanwhile, a scientific committee organized by the Municipality of Naples has listed in an official document the ingredients and processes [involved in the preparation] of a true Neapolitan pizza: flour, yeast, salt and water for the dough; then, extra virgin olive oil, mozzarella, of cow buffalo or "milk-flower" of the best quality, San Marzano tomatoes or small tomatoes, oregano, basil, garlic. Pay careful attention to the oven! It must be good and hot, at least 450 degrees.

- Excuse me. How many times a week do you eat pizza?

< Well, about once a week ... but to be honest, if I could, I would eat it every day because it is so good, really good.
